Chicken Bake

We made this last night and it was so good...


one box mashed potato flakes (or home-made / left-overs if you prefer)

two boxes stove-top stuffing mix (home-made / left overs if you prefer)

chicken, cooked and shredded

chicken gravy

one small can peas and carrots


Cook chicken and shred. Prepare mashed potatoes and spread into botton of casserole dish. Top with shredded chicken, then 1/2 of the gravy. Top with peas and carrots, then top it all with the prepared stuffing (uncooked).

Cook in oven on 350 for approx. 40 minutes until stuffing is nicely browned.

Serve and top with remaining gravy.

This is excellent on a cold night.

TIP: Prepare stuffing mix with chicken broth rather than water for a great taste.
